No-Bake Fudge Oatmeal Cookies

A delicious, no-bake recipe that is by far the best and most requested cookie!

No-bake cookies are a great way to begin baking with children and new cooks! I believe all my children started baking on their own with this recipe. LOL.

Bite into a mouth watering, chocolate, fudge melting with delicious coconut flakes… What’s not to love? YUM! This recipe is fail proof. If something goes wrong it’s the boiling part- either too long or not long enough. (How dry or gooey your cookie is.)

On with it, No-Bake Fudge Oatmeal Cookies

So, let’s grab that large pot and begin to heat 4 cups of sugar and 2 sticks of butter. (If you are on a budget, yes margarine works fine in this recipe.) Add your cup of milk and cocoa as well. Let is warm slowly on medium heat.

As you are waiting for that to warm up, place your oats into a large bowl- we use an extra large metal bowl since we quadruple the recipe on once a month baking days. (Yes, they freeze well too.) Heep your peanut butter in there and measure out your coconut. Now that your other ingredients are ready, set aside.

As the butter melts, continue to stir that chocolatey goodness!

Bring your mixture to a boil and turn on the timer for 1 minute. This sets the fudgey goodness that holds the cookie together.

After 1 minute, pour your mixture into the bowl of ingredients set aside. Measure in your vanilla. (Measure with your heart is fine and flavorful too.) Stir.

With an ice cream scoop (spray with crisco to prevent sticking) scoop cookie bites onto wax paper or brown bag covered surface.

Let cool.

Eat.
