Mrs Kerry’s Kitchen: Crockpot Chicken Spaghetti

Spaghetti! No need to say anything else for my clan. They love spaghetti! And while they do not get tired of it, chicken spaghetti is a great variation for spaghetti. Creamy cheese sauce over noodle-ey goodness, YUM! I love this recipe on a Sunday too. Toss everything in the crockpot when I head out to church and it is ready for lunch when I get home. Leaving time for a beautiful afternoon nap for the crew! Does it get better than that?

First, spray your crockpot! Super easy cleanup if you remember to spray it well.

Next, take a giant can of cream of mushroom and a can of cream of chicken and place it into the sprayed crockpot.

Then, add 1 package of cream cheese cubed.

Add 1/4 Cup of Italian seasoning and 2 cans of rotel.

Lastly, add your chicken. I use boneless, skinless chicken breast meat. This recipe it calls for 3 pounds of chicken. Upon everything entering the crockpot, place the lid on for 4 hours on LOW! Walla! That’s it. When you get home from church remove the chicken breast and dice or pull apart the meat. Add one bag (7 oz) of your favorite shredded cheese (We like the mix bags, some really like cheddar or pepperjack)to your crockpot sauce and boil up 2 pounds of noodles on the side. Serve with your favorite sides. (We enjoy salad greens and cheese toast.)

We love these meals on Sunday for a very filling and hearty lunch to hold everyone over until we dine again after the service meal. Note that this is very filling, a hearty 6 adults/teens can eat this 2x (we plan it this way for date-night Sundays) with a bit leftover. So feel free to half this recipe for your liking. Enjoy!
