Cranberry Salsa Recipe

What is better than fresh hot buttermilk pancakes with real maple syrup? Cranberry Salsa!!! Don’t let that fool you by the name, if anything it could be a mock jalapeño berry jelly!

Add this quick and simple recipe to the breakfast table for the holidays! Begin with softening your cranberries by boiling 3 cups of cranberries.

Next, prepare your food processor and add: 1 apple (cored and peeled), 1 jalapeño (seeds removed), 4 scallions and 4 Tablespoons of fresh cilantro. (*Optional- add 1 serrano pepper). Add your drained softened cranberries as well.

Add 1/2 cup of sugar and 2 Tablespoons of lime juice and let rest.
Mix juice and sugar well. Serve with your favorite appetizers or like our favorite- add it to the breakfast table!
