
Zucchini Brownies with Chocolate Frosting
~Spray a 9X13 pan and preheat your oven to 350 degrees.
~In a large mixing bowl, or kitchen aide, mix 1 1/2 Cups of sugar, 1/2 Cup of oil and 2 teaspoons of vanilla.
~Stir in or on low speed mix in 1/ Cup of cocoa powder, 1 1/2 teaspoons of baking soda and 1 teaspoon of salt.
~Stir well. Add 2 Cups of flour. Mix until flour is well combined. Next add 2 Cups of shredded zucchini. (Without the liquid from shredding.- If you want the liquid you will have to add up to another 1/2 cup of flour to get the right consistency depending how fresh your zucchini is.)
~When your zucchini is mixed in, add 1/2 Cup of chopped walnuts.
~BAKE 25-30 minutes.
~Brownies will be soft to touch, but no liquid batter when testing with a toothpick. Let cool and frost.
Frosting:
~Warm 6 Tablespoons of cocoa and 1/4 Cup of butter. Meanwhile in a small bowl, blend 1 teaspoon of vanilla and 2 Cups of confectioners’ sugar.
~Blend in warmed cocoa and butter mixture. Blend until smooth.
~Pour over brownies.
Serve warm & with maple nut ice cream for best results! NUM!!!
