Kerry’s Kitchen: Banana Pudding Cheesecake

Banana Pudding Cheesecake

I do not know about your church, but anytime someone states they are bringing a dessert and “cheesecake” is in the title, it’s a win! Here is a great choice that is super easy to throw together and is a favorite by hundreds. The best part is, there are so many way you can alter this recipe and it still tastes great. So if you are looking for a great dish to bring or you are scouring the internet for that last minute “I forgot about the fellowship dinner” recipe- look no further.

This recipe is for a standard cake pan. You will need your graham cracker crust first. That means in a large bowl, place 1&2/3 Cup of crackers, 1/4 Cups of sugar and 1/2 Cup of melted butter. Mix and press into your cake pan. Bake for 6 minutes or until slightly brown. (@375)

Next prepare your filling. Mix 2/3 Cups of sugar, 1/3 cups of flour and a pinch of salt in a pan. Warm and slowly add 2 Cups of milk. Stir continuously. Beat with milk and simmer. It will begin to thicken. It is ready.

In another bowl, beat 3 eggs yolks with 2 Cups of the mixture and return to the pot to simmer again. Stir constantly, and it will thicken like pudding. Remove from heat and add 2teaspoons of vanilla extract.

In a large bowl, place cream cheese and previous (yolk) mixture and mix well. It will become soft and creamy.

Place 1/3 of the mixture cream then add a layer of sliced bananas. Repeat. (If you have a lot of banana’s to use up start with bananas and layer to end up with bananas on top again. Repeat.

Refrigerate until completely cold.

This is delicious as is, but is wonderful with a layer of cool whip and graham crackers on top too. I posted this recipe because it is great in a pinch. But, do not forget it is wonderful altered as well. We have used Oreo, cookies, vanilla wafers and even chocolate cookies. For the cheesecake flavor we have tried a maple syrup and even a rootbeer flavored cheesecake instead of vanilla. Have fun ! Happy Baking!
