Spanish Egg Salad Recipe

(Yes this recipe can be cut in half.)

~Begin with one dozen hard-boiled eggs.

~In a large bowl, mix 3/4 cup of mayonnaise and 3/4 cup of roasted red pepper. Mix well.

~Add 1 & 1/2 teaspoons of smoked paprika. Stir.

~Grate 3 small garlic cloves and add to your mayo/pepper mixture bowl.

~Thinly chop 6 scallions. Add to bowl. Stir.

~Finally, peel 1 dozen (12) hard boiled eggs, rinse and chop. Next, add to your bowl. Mix well. **Optional- add 1 & 1/2 Cups of toasted sliced almonds.

To serve, fill a semolina roll (split) with watercress and egg salad.

Serves 4-6
